Simple Vanilla Coffee Creamer Recipe - If there was one thing I knew I’d have to figure out right away when I decided to transition to the Keto diet, it had to be coffee creamer. I’m not a black coffee kind of girl so this creamer was one of the first things I fell in love with. I will give you options for a completely dairy-free version, but the almond milk and heavy cream combination speaks to my heart in ways I can’t describe.

Simple Vanilla Coffee Creamer Recipe


  • 2 cups (480 ml) unsweetened almond milk
  • ½ cup (120 ml) heavy cream or full-fat coconut milk
  • ½ vanilla bean pod or 1 tsp vanilla extract
  • Stevia or sweetener of your choice, to taste

How to make Simple Vanilla Coffee Creamer

  1. Pour the almond milk and heavy cream into a 32-ounce (910-ml) Mason jar.
  2. Cut the vanilla bean pod in half lengthwise using a paring knife. Working from one end at a time, hold the tip of the bean against your cutting board and use the dull end of the knife to scrape the vanilla beans out of the pod.
  3. Add the vanilla beans to the Mason jar along with a few drops of stevia to taste. Use a cocktail stirrer to stir the mixture until the vanilla beans are well distributed. Or just put the lid on tightly and shake well to mix.
  4. Store in the fridge for up to a week and a half. Or pour into ice cube trays and freeze for up to 1 month for easy iced coffee drinks.
PRO TIP: If you are the only person in your household that drinks coffee, I recommend cutting the recipe in half for one person. Or you can make the full batch and freeze half of it in ice cube trays.
