Personally, I love chia pudding because the base is a blank canvas and you can add any flavor you like. Matcha powder is my favorite because matcha brings its own array of health benefits and it is very tasty.

  • 1 cup (240 ml) unsweetened almond milk, room temperature and divided
  • 1 tsp matcha powder, divided
  • ¼ cup (41 g) chia seeds, divided
  • Stevia, to taste
  • Slivered almonds and coconut shavings, to garnish

How to make Joyful Matcha Chia Pudding

  1. Divide the almond milk between two ½-pint (240-ml) Mason jars. Add ½ teaspoon of the matcha powder and 2 tablespoons (20 g) of chia seeds to each jar. Add a few drops of stevia into each jar to taste.
  2. Stir all the ingredients together in each jar and attach the lids. Shake the jars for about 1 minute to make sure all the ingredients are well incorporated.
  3. Remove the lid. Let the pudding sit on the countertop for about 5 minutes, or until it starts to settle. Give it a quick stir. Return the lids to the jars and close tightly.
  4. Transfer the jars to the fridge and let the pudding set overnight. The next morning, top the pudding with almonds and coconut shavings.
PRO TIP: Your chia pudding will last in the fridge for up to 1 week, so you can make enough jars to last 1 week.
