Fancy Avocado Eggs Recipe

Ingredients

  • 2 ripe avocados
  • 4 eggs
  • 1 tbsp (15 ml) olive oil
  • Sea salt and black pepper
  • Goat cheese, fresh cilantro leaves and fresh chives, to serve

How to make Fancy Avocado Eggs

  1. Preheat the oven to 425°F (220°C, or gas mark 7).
  2. Cut the avocados in half and remove the pits. Scoop out enough of the avocado flesh to create a well for the eggs. Place the avocado halves on a sheet pan. Crack an egg inside of each avocado half, drizzle with the olive oil and sprinkle with a pinch of salt and pepper.
  3. Bake the avocados in the oven for 12 to 15 minutes, or until the yolk reaches your desired consistency.
  4. Serve with a sprinkling of goat cheese, cilantro and chives. Store any leftovers in the fridge for 2 days. It’s best to reheat them in the oven or toaster oven.
PRO TIP: To add some variety, or if you are not a fan of goat cheese and cilantro, you can absolutely make this your own and add your favorite toppings. Some options include bacon, other cheeses, tomatoes, kale or spinach. Add these toppings after you crack the egg in the avocado, then transfer them to the oven.
