Hearty Chicken Cacciatore Recipe


  • 3 tbsp (45 ml) olive oil, divided
  • 1 lb (454 g) boneless, skinless chicken thighs
  • 1 tsp sea salt, plus more to taste
  • 1 tsp black pepper, plus more to taste
  • 1 onion, diced
  • 4 cloves garlic, finely minced
  • 1 tbsp (16 g) tomato paste
  • ¼ cup (60 ml) Chicken Bone Broth or store-bought
  • 1 (14.5-oz [411-g]) can fire-roasted diced tomatoes
  • 1 tsp capers
  • Chopped basil leaves, to garnish

How to make Hearty Chicken Cacciatore

  1. Heat 2 tablespoons (30 ml) of olive oil in a large, deep skillet or Dutch oven over medium-high heat.
  2. Pat the chicken thighs dry using a clean paper towel. Season the chicken on both sides with the salt and black pepper. Add the chicken to the hot pan and sear for 3 to 5 minutes on both sides. Remove the chicken from the pan and set it aside.
  3. Add the remaining tablespoon (15 ml) of olive oil to same pan along with the onion and garlic. Sauté the onion and garlic, stirring frequently, for 5 to 7 minutes until the onion is tender. Stir in the tomato paste and continue to cook for about 2 minutes. Pour in the broth and stir to lift up all the yummy bits and pieces from the bottom of the pan. Add the tomatoes to the pan.
  4. Give the sauce a quick stir and nestle the chicken pieces into the sauce. Sprinkle the capers over the chicken, cover the pan and continue to simmer for 7 to 10 minutes. Remove the cover and simmer for 5 minutes to thicken the sauce.
  5. Adjust salt and pepper, if desired, and garnish with fresh basil leaves.
