5-Ingredient Shrimp Alfredo

5-Ingredient Shrimp Alfredo Recipe - After you’ve had a long day, you just need simplicity when it comes to dinner. That’s exactly where five-ingredient meals come in. This creamy and decadent shrimp alfredo is perfect for date night or nights when you just need some comfort food. I did not count the butter, salt, pepper and herb garnish in the ingredient number because these are kitchen staples.

5-Ingredient Shrimp Alfredo Recipe

  • 2 Zucchinis, spiralized
  • ½ tsp sea salt, plus more to taste
  • 2 tbsp (28 g) butter
  • ½ lb (226 g) wild-caught shrimp, peeled and deveined with tails on
  • Black pepper
  • 2 cloves garlic, finely minced
  • ½ cup (120 ml) heavy cream
  • ¼ cup (25 g) grated Parmesan cheese
  • Fresh parsley, to garnish

How to make 5-Ingredient Shrimp Alfredo

  1. Put the spiralized zucchini noodles in a bowl lined with cheesecloth. Sprinkle ½ teaspoon of salt all over the noodles and let them sit for about 15 minutes. After 15 minutes, wrap the cheesecloth around the noodles and squeeze to get the excess liquid out of the zucchini. Set the noodles aside.
  2. Heat the butter in a large skillet over medium-high heat. Season the shrimp with a couple pinches of salt and pepper. Transfer the shrimp to the heated skillet and sear for 2 to 3 minutes on both sides. Remove the shrimp from the pan and set it aside
  3. Add the garlic to the pan and sauté for 1 to 2 minutes. Slowly add the heavy cream to the pan and simmer for 3 to 5 minutes, stirring occasionally. Add the zucchini noodles along with the Parmesan cheese to the pan. Toss to combine. Return the shrimp and all of its juices to the pan and toss to combine with the pasta.
  4. At this point, season with salt and pepper to taste and garnish with fresh parsley.
PRO TIP: For a dairy-free option, use full-fat coconut milk instead of heavy cream. You can also omit the Parmesan cheese and use nutritional yeast for a cheesy, nutty flavor.
