Vanilla Muffins

Vanilla Muffins - These tasty muffins contain a combination of eggs, sugar, butter and vanilla extract. To get a more decadent flavor, you can use ¼ tsp of vanilla bean paste. You can serve these with marmalade, strawberry or raspberry preserves, or any jam of your choice.

Vanilla Muffins Recipe

Ingredients:

  • 1 tbsp. Truvia
  • 1 egg, beaten
  • 4 tbsp. coconut flour
  • 1 cup water, for cooking
  • 1 tsp. coconut shred
  • 1 tsp. vanilla extract
  • ¼ tsp. baking powder

How to make Vanilla Muffins

  1. Mix up together all the ingredients and stir well until you get a thick batter
  2. Add water in the Ninja Foodi basket. Place the batter into the muffin molds and transfer them on the Ninja Foodi rack.
  3. Lower the pressure cooker lid and set Pressure mode High pressure
  4. Cook the muffins for 2 minutes. Use the quick pressure release method. Chill the muffins and serve!
