Summertime Veggie Soup Recipe - This vegetable soup is full of garden goodness like green beans, zucchini, potatoes, celery but its turmeric gives it a tasty twist. It’s a favorite soup for summers.

Ingredients

  • 3 cups leeks, sliced
  • 6 cups rainbow chard, stems and leaves, chopped
  • 1 cup celery, chopped
  • 2 tablespoons garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 2 teaspoons fresh ground black pepper
  • 3 cups chicken broth
  • 2 cups yellow summer squash, sliced into 1/ inch slices
  • ¼ cup fresh parsley, chopped
  • ¾ cup heavy whip cream
  • 4-6 tablespoons parmesan cheese, grated

How to make Summertime Veggie Soup

  1. Add leeks, chard, celery, 1 tablespoon garlic, oregano, salt, pepper and broth to your Ninja Foodi
  2. Lock lid and cook on high pressure for 3 minutes. Quick release pressure
  3. Open lid and add more broth, set your pot to Saute mode and adjust heat to high
  4. Add yellow squash, parsley and remaining 1 tablespoon garlic
  5. Let it cook for 2-3 minutes until the squash is soft
  6. Stir in cream and sprinkle parmesan. Serve and enjoy!
