Cauliflower Soup

Cauliflower Soup Recipe - This soup yields an amazing flavor and calls for basic ingredients. It is a great accompaniment to sandwiches and salads. It goes with any winter flavors like greens i.e. kale and arugula, brussels sprouts and butternut squash. It is diet friendly and gluten free.

Cauliflower Soup Recipe


  • 5 slices bacon, chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cauliflower head, trimmed
  • 4 cups chicken broth
  • 1 cup almond milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 and ½ cups cheddar cheese, shredded
  • Sour cream and chopped fresh chives for serving

How to make Cauliflower Soup

  1. Set your pot to Saute mode and pre-heat it for 5 minutes on high settings
  2. Add bacon, onion, garlic to your pot and cook for 5 minutes. Reserve bacon for garnish
  3. Add cauliflower, chicken broth to the pot and place pressure cooker lid, seal the pressure valves
  4. Cook on high pressure for 10 minutes, quick release the pressure once did
  5. Add milk, and mash the soup reaches your desired consistency
  6. Season with salt, pepper and sprinkle cheese evenly on top of the soup
  7. Close crisping lid and Broil for 5 minutes
  8. Once done, top with reserved crispy bacon and serve with sour cream and chives. Enjoy!
