Ingredients

  • 1 head cauliflower
  • 4 cups of water
  • 1 tablespoon salt
  • 4 tablespoons butter
  • 3 ounces scallions
  • 1 teaspoon chicken stock
  • ¼ teaspoon sesame seeds
  • 1 egg yolk

How to make Cauliflower Puree with Scallions

  1. Wash the cauliflower and chop it roughly. Place the cauliflower in the pressure cooker.
  2. Add the water and salt. Close the pressure cooker lid and cook the vegetables on Pressure mode for 5 minutes.
  3. Release the pressure and open the pressure cooker lid. Remove the cauliflower from the pressure cooker and let it rest briefly.
  4. Place the cauliflower in a blender. Add the butter, chicken stock, and sesame seeds. Blend the mixture well.
  5. Chop the scallions. Add the egg yolk to the blender and blend the mixture for 30 seconds. Remove the cauliflower puree from the blender and combine it with the scallions.
  6. Mix well and serve.
