Beef with Pumpkin Recipe - On a cold day, Beef with Pumpkin is the perfect recipe to keep you warm and full. It is also spiced up to make it more delicious.

Beef with Pumpkin Recipe


  • 2 teaspoons coconut oil
  • 1½ pounds grass-fed boneless beef, cut into cubes
  • 1 small onion, chopped
  • ½ tablespoon fresh thyme, chopped
  • ½ tablespoon fresh sage, chopped
  • 1½ cups homemade beef broth
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • 1 bay leaf
  • 2½ cups pumpkin, peeled and cubed
  • Salt and ground black pepper

How to make Beef with Pumpkin

  1. Select Sauté/Sear setting of Ninja Foodi and place the oil into the pot.
  2. Press Start/Stop to begin cooking and heat for about 2-3 minutes.
  3. Add the beef and cook for about 5 minutes.
  4. With a slotted spoon, transfer the beef into a bowl.
  5. In the pot, add the onion, thyme and sage and cook for 4-5 minutes.
  6. Press Start/Stop to stop cooking and stir in the cooked beef, broth, nutmeg, all spices and bay leaf
  7. Close the Ninja Foodi with crisping lid and select Slow Cooker.
  8. Set on Low for 8 hours.
  9. Press Start/Stop to begin cooking.
  10. After 6 hours of cooking, stir in the pumpkin, salt and black pepper.
  11. Serve hot.
