Braised Chicken Thigh with Chokeful Of Mushrooms Recipe

Ingredients

  • 4 chicken thighs
  • 1 tsp. salt
  • 1 tbsp. olive oil
  • ½ sliced onion
  • ½ cup white wine vinegar
  • ½ cup chicken stock
  • 1 cup frozen artichoke hearts, thawed and drained
  • 1 bay leaf
  • Ground black pepper
  • ¼ cup heavy cream

How to make Braised Chicken Thigh with Chokeful Of Mushrooms

  1. Set your Ninja Foodi to Sauté mode and set it to Medium-HIGH, pre-heat for 5 minutes
  2. Pour olive oil and wait until it shimmers
  3. Add chicken thighs, skin side-side down, cook for 4-5 minutes
  4. Turn and sear the other side for 1 minute
  5. Remove from pot. Add onion, sprinkle with remaining salt, cook for 2 minutes more until tender
  6. Add wine and bring to a boil. Cook for approximately 3 minutes until the wine reduces by half
  7. Add chicken stock, artichoke hearts, bay leaf, thyme, several grinds of pepper, stir well
  8. Place chicken thigh back to the pot skin side up, lock pressure lid into place and seal the valve
  9. Select pressure mode to high and cook for 5 minutes
  10. Once done, quick release pressure and use tongs to transfer chicken to Reversible Rack in the upper position, add mushrooms to sauce and stir. Set rack in the pot
  11. Close with crisping lid and select Bake/Roast, adjust the temperature to 375 degrees F, cook for 12 minutes
  12. Once done, open lid and transfer chicken to the platter, add heavy cream and stir into the sauce. Stir in the sauce, pepper and salt
  13. Pour sauce and vegetables around chicken, serve and enjoy!
