Parmesan and Zucchini Waffles Recipe - These waffles are great to make whenever you are looking for a healthy alternative to breakfast. It is a dish you don’t have to feel guilty about enjoying.

Parmesan and Zucchini Waffles Recipe


  • 2 cups of zucchini, shredded
  • 1 egg
  • ¼ cup of whole milk
  • ½ cup of grated Parmesan cheese
  • ½ cup of all-purpose flour
  • Dash of salt and black pepper

How to make Parmesan and Zucchini Waffles

  1. In a colander, add in the shredded zucchini. Season with ¼ tsp. of salt. Set aside to rest for 30 minutes. Rinse under 30 minutes and press out the excess moisture. Pat dry with a few paper towels.
  2. Preheat a waffle iron to medium heat.
  3. In a bowl, add in the egg, whole milk and ¼ cup of the grated parmesan cheese. Stir well to mix.
  4. In a separate bowl, add in the all-purpose flour. Season with a dash of salt and black pepper. Stir well to mix. Add into the egg mix along with the shredded zucchini. Stir well to evenly mix.
  5. Grease the waffle iron on both sides with cooking spray.
  6. Drop 3 to 4 tbsp. of the zucchini mix onto the waffle iron. Close the lid, then cook for 3 to 5 minutes approximately or until golden. Transfer onto a plate and repeat.
  7. Serve with a topping of the remaining ¼ cup of grated parmesan cheese.
