Asparagus Soup Recipe - The Creamy Early Morning Asparagus Soup is made mainly using asparagus and vegetable stock. It is incredibly delicious. It does not take a lot of time to prepare it and can be eaten alongside various meals.

Asparagus Soup Recipe


  • 1 tablespoon olive oil
  • 3 green onions, sliced crosswise into ¼ inch pieces
  • 1-pound asparagus, tough ends removed, cut into 1-inch pieces
  • 4 cups vegetable stock
  • 1 tablespoon unsalted butter
  • 1 tablespoon almond flour
  • 2 teaspoon salt
  • 1 teaspoon white pepper
  • ½ cup heavy cream

How to make Asparagus Soup

  1. Set your Ninja Foodi to “Saute” mode and add oil, let it heat up
  2. Add green onions and Saute for a few minutes, add asparagus and stock
  3. Lock lid and cook on high pressure for 5 minutes
  4. Take a small saucepan and place it over low heat, add butter, flour and stir until the mixture foams and turns into a golden beige, this is your blond roux
  5. Remove from heat. Release pressure naturally over 10 minutes
  6. Open lid and add roux, salt and pepper to the soup
  7. Use an immersion blender to puree the soup
  8. Taste and season accordingly, swirl in cream and enjoy!
